- 2 tablespoons olive oil
- 1 cup coarsely chopped onion
- 1/2 cup diced celery
- 3/4 cup chopped green bell pepper
- 3/4 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1/2 teaspoon cayenne pepper
- 1 pound andouille sausage, diced
- 3 cups frozen corn kernels, thawed

- 6 cups low-sodium chicken broth
- 3 Yukon Gold potatoes, cut into 1/2-inch cubes

- Dressing:
- 1/8 cup extra virgin olive oil
- 1/4 cup vegetable oil
- 4 tbsp red wine vinegar
- 1 tbsp honey
- 1/2 tsp ground black pepper
- 1/4 tsp salt
- 1/2 pomegranate (juice & seeds)

- 4-5 large potatoes, cut into quarters (I prefer skin on, but this is up to preference)
- 2 tbsp butter
- 1/2 cup milk
- 1/4 cup sour cream
- 2 cloves garlic, diced
- salt
- pepper
- 1 large pizza crust (I buy pre-made, you can make your own if you choose)
- 1 cup broccoli florets (frozen is fine)
- 1 cup crumbled, cooked bacon
- 1 cup cheese of your choice

- 3 green onions, sliced
- Serve with sour cream and salsa if desired

- NGREDIENTS:
- 2 medium sweet potatoes, cubed, plus olive oil, salt & pepper for roasting
- 2 cups baby salad greens (baby kale, spinach, arugula, etc.)
- 1/3 cup pomegranate seeds
- 1/3 cup crumbled feta
- 1/4 cup toasted pistachios, toasted & chopped

- 2-3 chopped scallions, white and green parts

- 1/2 clove minced garlic
- 2 teaspoons honey

Found a recipe similar to this in a book in the kitchen of a house we rented at the Outer Banks in May 2013
- 1 medium to large eggplant
- Salt
- Vegetable oil, enough to come 1/2" up the side of the pan (I use less!)
- 1/2 cup onion, thinly sliced
- 1-1/2 tsp chopped garlic
- 2 cups imported canned Italian plum tomatoes, drained and cut into thin strips without their juice (in summer I use fresh tomatoes)
- Freshly ground pepper
- 1 pound spaghetti (or other pasta that you like)
- 3 Tbs. grated mild pecorino romano cheese
- 3 Tbs. fresh ricotta
- 8-10 fresh basil leaves, cut into chiffonade. If out of season, use 2 Tbs. chopped parsley
- Freshly ground Parmesan for the table

- 1 9-inch pie shell
- 3-4 tomatoes (small) or 2 large, sliced ~1/4 inch, salted and drained well on paper towels (about 10-15 minutes - this is VERY important)
- 1/2 yellow or red onion, or 3-4 scallions, chopped
- 1/4 cup sliced basil (about 8 leaves) and or 1 tsp Italian seasoning
- 1-2 cups grated cheese (combination of sharp cheddar and Monterey Jack, or Mozzarella or Gruyere or Parmesan any combo will do!)
- 3/4-1 cup mayonnaise
