Tomato Jam (Sweet & Savory)

Tomato Jam? That might seem odd, but think of this as a condiment that adds an extra layer of flavor to many dishes
- 2 pints small tomatoes (cherry and/or pear)
- 2 tsp coarse salt & a few twists of the pepper mill
- 1/4 cup brown sugar (can increase, up to 1/2 cup, if you like it sweeter)
- 1/4 cup apple cider vinegar
- 1 small onion, chopped
- 1 Tbsp. sugar
- 1/8 tsp. red pepper flakes
- 1-1/2 cups water (or enough to just cover the tomatoes)
- juice of 1/2 lemon
- 1-1/2 tsp dried thyme
Jailhouse Potato-Cinnamon Rolls

To Make the Rolls: Fill a large saucepan three-quarters full with water and set on high heat to boil
- Cinnamon Rolls:
- 2 medium russet Potatoes
- 1 ounce active dry yeast (4 packets)

Steam or boil the broccoli until quite tender (but not mushy)
- 3 cups broccoli florets and stem, roughly chopped into 2cm/1 inch pieces (see notes) (about 1 medium head of broccoli)

Pumpkin Gingersnap Truffles

Melt white chocolate slowly in double boiler over low heat or in microwave
- 1 cup white chocolate chips
- 1/3 cup gingersnap cookie crumbs
- 1/4 cup canned pumpkin puree

If you are using extra large zucchini, scoop out and discard the seeds first

- 1 onion, finely chopped
- 1/2 jalapeno chile (or more to taste, depending on how spicy you would like the soup to be), seeds, stems and ribs removed and discarded, chopped

PEANUT BUTTER CORNFLAKE BARS

- 1/2 - 1 c. sugar (orig calls for 1 cup...too sweet for us)
- 1 c. light corn syrup (orig calls for reg corn syrup, too sweet for us)
- 1 c. peanut butter
- 6 c. corn flakes
- Optional: Add a package of Honey Roasted Nuts (or chopped fav nut) for delicious extra crunch

- 2 cans of cream of celery soup

- 1 (12 oz) bag medium or wide noodles
- 2 to 3 cups frozen baby peas
- 3 cans white albarcore tune drained and flaked

The month of March is when I make my annual St
- VEGETABLES:
- 1 package corned beef brisket (3 to 4 Pounds)
- 3 tablespoons ground black pepper
- 1 head green cabbage (can use 2 If you'd like)
- Olive oil, for searing
- 1/2 bottle Guinness, or any beer
- 1 cup balsamic vinegar
- 2 tablespoons sugar (optional)
- 3 to 4 carrots, peeled and cut into 4 to 5-inch pieces
- 6 to 8 potatoes, peeled and cut into quarters (I use Yukon Gold potatoes)
- 2 onions, peeled and quartered
- BRISKET GLAZE:
- 1/3 cup brown sugar
- 2 tablespoons molasses
- 1/4 cup bourbon (if you'd prefer, you can use apple juice)
