- Add:
- Cook a large pot of potatoes (10 - 12) I like red for this
- 3/4 cup sour cream
- 4 oz. cream cheese
- 1-1/2 tsp onion salt or finely grated onion
- 1/2 tsp salt and pepper
- 2 tbsp. butter
One Pot Creamy Tomato Basil Pasta Bake

1.Preheat oven to 350 degrees F
- 1 pound fettuccine (use your favorite gluten free brand if needed)
- 1 tablespoon butter
- 1 cup chunky basil pesto (or store bought)
- 1-2 (8 ounce) jars of your favorite pasta sauce
- 1/3 cup enchilada sauce
- 1/2 cup oil-packed sun-dried tomatoes, oil drained
- 8 ounces sheep's milk feta cheese, crumbled (may sub regular feta, but the sheep's milk is creamier)
- 6 ounces fontina cheese, finely diced or shredded
- 2 ounces cream cheese, softened
- 1/2 cup heavy cream
- salt + pepper
- 6 ounces (or more) fresh mozzarella cheese, sliced
- fresh basil, for serving
- tom-tom (grape/cherry) tomatoes, halved, for serving
Slow Cooker Smothered Cube Steak and Potatoes

This is so easy and delicious and it comes out so tender and all covered in glistening delicious brown gravy
- You will need a 5 quart slow cooker crock pot
- 4 - 8 oz cube steaks ( approximately 2 lbs)
- garlic salt
- fresh ground black pepper to taste
- 1 cup of all purpose flour seasoned with 1 tbsp of montreal steak seasoning or you can simply season the flour with 1 tbsp garlic salt and 2 tsp black pepper
- olive oil and 2 pats butter
- Cooking oil Spray
- 2 packages of brown gravy mix
- 2 cups of water
- 3 or 4 fresh garlic cloves
- 1/2 of a small onion sliced into thin slices and separated into rings
- 4 to 6 medium size white russet potatoes, peeled and sliced into 3/4 inch slices
- 2 dried bay leaves
- 2 tbsp worcestershire sauce

In a mix-master combine the sugar and the butter and mix until smooth

- 2 1/2 cups self-rising flour
- 3/4 cups sugar
- 1 cup milk
- 5 tablespoons butter

Frito Corn Salad

In a large bowl, combine thawed corn, cheese, diced bell pepper and onions
- 1 (12 oz.) bag frozen corn kernels, thawed (see notes below)
- 2 cups grated cheddar cheese
- 1 green pepper, diced
- 1/2 cup red onion, finely diced
- 1 cup mayonnaise
- 1 tbsp. Taco Seasoning
- 1 (10 1/4 oz.) bag Fritos (regular or chili cheese), crushed

- Note: I like to use the frozen corn that has been thawed because I think it has more of a fresh corn taste. But 2 cans of well-drained corn will work with this too.
Unstuffed Cabbage Soup

Brown ground beef with onion and garlic until no longer pink
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 quart stewed tomatoes OR 2 15 oz. cans stewed or diced tomatoes
- 6 C. water
- 1 C. white or brown rice
- 1 large can tomato sauce
- 1/3 C. ketchup
- 2 T. Worcestershire sauce
- 1 t. chili powder
- 1 small head of cabbage OR 1/2 large head shredded OR 1 bag of cole slaw mix
- OPTIONAL: 1 can Rotel original diced tomatoes with jalapenos

- FILLING:
- 3 Pounds yams
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 cup packed golden brown sugar
- 3 large eggs, room temperature
- 1 cup half and half
- 1 tablespoon all purpose flour
- 3/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract

Normally, broccoli gets squishy when you cook it
- Put the broccoli on a cookie sheet. Toss with:
- Take 4 to 5 pounds of broccoli (I just got two large bunches),
- cut into florets (but relatively big ones.)
- dry them THOROUGHLY. That is, if you wash them.
- 5 T olive oil,
- salt and pepper
- 1 1/2 tsps kosher salt,
- 1/2 tsp fresh ground pepper

- 5 Medium Apples (I use Fuji Apples but Granny Smiths are good too)
- 1 Can (15oz) of Pumpkin Puree (Like Libby's Pure Pumpkin - do NOT use Pumpkin Pie Filling)
