Kick your weeknight dinners up a notch with these deliciously zesty mexican stuffed shells!
- 4 cups chicken breast, cooked and chopped
- 1 can black beans, rinsed and drained
- 6 green onions, diced
- 1/2 each of red, green, yellow, & orange bell peppers, diced
- 3 (8-ounce) blocks cream cheese, softened
- 2 cans diced tomatoes with chiles
- 1/4 to 1/2 cup chicken stock
- 1 teaspoon cumin
- 1 1/2 cups sharp cheddar cheese, shredded
- 1 cup of picante sauce
- 38 large pasta shells, cooked al dente

Homemade enchilada salsa verde sauce is easy to make, and delicious
- ENCHILADA SAUCE:
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 tablespoon flour
- 1 cup chicken stock or vegetable stock
- 2 teaspoons cumin
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1/2 cup fresh cilantro, chopped
- 1 cup mild or medium salsa verde
- 1/2 cup fat free sour cream
- ENCHILADAS:
- 4 cups cooked chicken breasts, chopped or shredded
- 2 cups shredded Mexican blend cheese
- 3 avocados, peeled and chopped
- 8 flour tortillas

This is quick, easy and tasty!! Made it for our dinner last nite with some steamed broccoli and carrots and garlic
- 2 dry cups pasta (shells or elbow macaroni are really good for this recipe)
- 1 15-16 oz jar of a GOOD Alfredo sauce
- 1-2 cups cooked chicken, shredded or chunked
- 1/2 cup chicken broth
- 5 oz shredded Parmesan cheese
- 2 cups shredded mozzarella cheese (one 8 oz bag)
- 1-1/2 tsp minced garlic

- 2 cups water (475 g)

- Sauce:
- 1/2 cup orange juice
- 1 tablespoon grated orange zest
- 2 big garlic cloves
- 1 tablespoon oyster sauce
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 teaspoon minced ginger
- A dash of honey, sugar or agave
- STIR FRY:
- 1 pound chicken tender cut into strips
- 3 tablespoon cornstarch
