- Bagna Cauda:
- 10 10 10 anchovy fillets, cleaned (and rinsed if salt-packed) and finely chopped
- 5 5 5 garlic cloves, finely minced
- 1/4 1/4 1/4 cup (1/2 stick) butter
- 1/4 1/4 1/4 cup extra-virgin olive oil
- 1 1 1 pinch lemon zest strips
- Cauliflower with bagna cauda
- Kosher salt for salting the water and seasoning the cauliflower)
- 1 1 1 head cauliflower
- Freshly cracked black pepper
- 2 2 to tablespoons extra-virgin olive oil, or enough to coat the pan
- Warm bagna cauda (from recipe above)
- Chopped Italian parsley, for garnish
