- 1/2 yellow onion, sliced
- 1 (14oz) can of coconut milk
- 1 cup vegetable broth
- 2 garlic cloves, minced

- 2 large leeks (green part used to flavor the chicken stock) light green and white parts diced
- 2 large fennel bulbs, diced
