This meatloaf recipe will leave you wondering why you didn’t switch to turkey sooner
- MEATLOAF:
- 1/2 white onion, chopped
- 1 carrot, peeled, chopped
- 1/2 red bell pepper, chopped
- 1/2 cup arugula
- 2 cloves garlic, minced
- 2 (20-ounce) packages JENNIE-O® Lean Ground Turkey
- 1 cup gluten free breadcrumbs
- 1 teaspoon ground thyme
- 1 teaspoon chili powder
- 1 teaspoon freshly ground pepper
- 1 teaspoon salt
- 1/2 cup plain unsweetened almond milk
- 1 egg
- olive oil spray
- GLAZE:
- 1/2 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
- 1 teaspoon cumin
- 1 teaspoon honey
- 2 tablespoons chopped flat leaf parsley

1. In small bowl, combine spices
- 1 tbsp. each kosher salt and paprika
- 1 tsp each freshly ground pepper and ground mustard powder ( I use Coleman's)
- 1/4 tsp cayenne pepper
- 3 1/2 pounds boneless pork shoulder or 5 pound boned pork shoulder, visible fat removed
- 1 tbsp. vegetable oil
- 1 large yellow onion,halved and sliced 1/4 " thick
- 6 garlic cloves, peeled and lightly smashed
- 1/4 cup tomato paste
- 2 cups chicken broth
- 3/4 cup cider vinegar
- 3 tsp. worcestershire sauce
- 1/2 cup ketcup
- 1/4 firmly packed brown sugar
- For serving
