- 4 Lebanese cucumbers (OR 1/2 English Cucumber), in small dice
- 3 tomatillos, if tinned, quarter them. If fresh, cut in small dice
- 3 green onions, cut in fine dice
- 1 clove garlic
- A small handful of fresh cilantro
- 1/4 cup olive oil
- A pinch of coarse salt
- A grinding of cracked black pepper
- 2 whole limes

- 2 cans chicken broth
- 1 large onion, chopped
- 1 pound package of split peas

- 6 to 7 carrots, sliced
- 1 1/2 cups diced ham
- 2 tablespoons parsley
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 3 medium potatoes, diced (optional)
- 3 Roma tomatoes, diced
