Crash Potatoes - Two ways

I'm a big fan of creamy mashed potatoes-- really, I love spuds boiled, deep fried, roasted and baked
- The recipe is so simple that you really don't need measurements. What you will need is:
- Baking Sheet
- A brush to apply the olive oil
- Potato Masher (you can use a fork, but the masher makes thing easier)
- Potatoes of your choice-- I like red bliss or Yukon Gold
- Olive oil
- Kosher salt (I never use table salt for roasting)
- Fresh ground black pepper
- Herb of your choice-- I've used fresh shopped rosemary or thyme. Dried herbs work, too
- Optional: heavy cream and parmesan cheese
- I've also seen versions using cheese and bacon

- 2 pounds dried pinto or navy beans (I recommend navy beans)
- 1 large onion (about 1-pound), peeled, halved and sliced
- 4 canned plum tomatoes, seeded and crushed (I used fresh roma tomatoes, sliced in half)
- 2 dried bay leaves
- 1 tablespoon plus 1 teaspoon dry mustard
- 12 whole cloves (I recommend reducing to 8, as the cloves almost overpowered the flavor)
- 1/2 cup dark-brown sugar, packed (increase to 3/4 if you like sweeter beans)
- 1 tablespoon plus 1 teaspoon coarse salt, plus more for serving
- 1/2 teaspoon freshly ground black pepper, plus more for serving
- 1/2 cup unsulphured molasses

- to 425 30 cubed butternut or kabocha squash (no need to peel) with olive oil and sprinkle with salt, sugar and red pepper flakes. Roast at 425 degrees F, 30 minutes.
- Sauteed shrimp: Stir-fry peeled deveined shrimp in hot olive oil with minced ginger, chopped scallions and a pinch each of sugar, salt and pepper.
