- 2 cups meringue topping

- Frosting:
- 24 ounces cream cheese, softened
- 3/4 stick (3-oz) margarine, softened
- 1 –1/4 cups confectioners’ sugar, sifted
- 1/4 tsp maple extract
- Garnish:
- 6 thick‒cut, maple‒cured bacon strips, cut into 3 pieces each and cooked until fat is rendered and crispy
- 1/2 cup semisweet chocolate chips

- 2 pints (16 oz.) cherry or grape tomatoes, sliced in half
- 8 oz. fresh mozzarella cheese, cut into 1/2 inch cubes and patted dry

- 1 tsp Anchovy paste (optional)
- The Salad
- 1 c orzo pasta (cooked per instructions)
- 1 rotisserie chicken, deboned and chopped
- 5-6 oz feta cut into 1/4" cubes
- 3/4 c small cherub tomatoes, quartered
- 1/4 to 1/2 c chopped flat leaf parsley (can substitute or blend arugula, spinach, or power greens)
- 4 oz kalamata olives, quartered (optional)

- 1 box whole grain penne
- 1 onion, chopped
- 1 tsp garlic
- 1 container mushrooms, washed and sliced
- 1/4 c vegetable broth for saute
- 5 oz fresh organic spinach

- 1/2 cup finely chopped tomato, seeds removed (Roma works well)
