- 1 teaspoon Worcestershire sauce
- 1 teaspoon Sriracha or Tabasco (or 1/2 teaspoon for less spice)
- 1/2 teaspoon each sea salt and freshly ground black pepper
- 1 1/2 pound large shrimp (16/20 count), peeled and deveined
- 1 1/4 cup flour
- 1 cup yellow cornmeal
- 1 tablespoon granulated garlic powder
- 1 tablespoon granulated onion powder
- 1 teaspoon sea, Kosher or other salt
- 1 teaspoon freshly ground black pepper

- 1/4 cup dry white wine
- 2 cups heavy cream
- 1 tablespoon fresh lemon juice
- 1 pound crawfish tails*
- 1/2 cup chopped green onions
- 1/2 cup chopped fresh parsley leaves
- 1 cup grated Parmesan
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
