  • 4 eggs
  • 2 egg yolk
  • 3/4 cup sliced scallion
  • dash Tabasco sauce
  • 3/4 lb heirloom cherry tomatoes, halved (or 1/2 lb (1-2) large heirloom tomatoes, cut in thin wedges)
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp smoked paprika
  • 1/3 cup panko breadcrumbs
  • Salt and freshly ground white pepper
