Apple Brown Rice Stuffing in Pressure Cooker

This dressing is quick and easy to make in your pressure cooker. A perfect side dish any time of year, this apple brown rice stuffing would be a great side to pork chops.
Ingredients
- 2 tablespoons butter
- 1 apple, peeled, cored and diced
- 2 stalks celery, diced
- 2 cups long grain brown rice, uncooked
- 2 cup chicken stock
- 1 cup apple juice
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/8 teaspoon cinnamon
- Salt and pepper, to taste

Preparation
Step 1
Place the butter, apple and celery in the pressure cooker and heat on high or brown with lid of, stirring constantly for 2-3 min until celery sweating.
Add rice and stir constantly for 1 minute to coat with butter
Add remaining ingredients and lock lid. Set on high and cook for 12 minutes
Let the pressure releases naturally for 10 minutes before quick release.
Salt and pepper, to taste
