I love this for a hearty midweek meal
- 350 g rigatoni or penne pasta
- 4 Pork Sausages, casings removed, coarsely chopped
- 1 tbs olive oil
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 1/2 cup (125ml) dry white wine
- 2 x 200g punnets Perino grape tomatoes, halved
- 1 tbs tomato paste
- 1/2 cup finely shredded basil
- Finely grated parmesan, to serve
- Rocket leaves, to serve
Apple, Cheddar and Spinach Salad with Honey-Apple Cider Vinaigrette

Salad - To a large bowl or platter, add all ingredients in the order listed; set aside
