- 1 pound ground turkey (or ground beef)
- 1 packet taco seasoning mix
- 3/4 cup water
- 1 can (16 oz.) diced tomatoes
- 1 can (16 oz.) pinto beans, drained & rinsed
- 2 cups tortilla chips or broken taco shells
- 1 cup shredded cheddar cheese
- 4 green onions
- 1 red bell pepper, diced
- 1 cup lettuce, chopped
Chicken Taco Casserole

It's sort of like a Mexican lasagna, with corn tortillas instead of noodles
- Nonstick cooking spray
- 12 ounces chicken breast strips for stir-frying
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 2 teaspoons canola oil
- 1 medium onion, halved and thinly sliced
- 3/4 cup red or green Bell pepper, chopped
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 1/2 cups purchased salsa
- 4 (6 inch) corn tortillas, coarsely torn
- 3 ounces reduced-fat Monterey Jack cheese, shredded, about 3/4 cup
- 1/2 cup cherry tomatoes, quartered or chopped (optional)
- 1/2 of an avocado, halved, seeded, peeled, and chopped (optional)
- Corn chips, baked tortilla chips, or broken taco shells (optional)
The Easiest Fish Tacos

Directions: Cook fish sticks according to package directions until golden and crispy
- for the sauce:
- 8 pieces frozen prepared fish sticks {got mine at trader joes}
- 8 small flour tortillas
- lettuce
- avocado
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 tablespoon taco seasoning
- juice of 1 lime
- for the salad:
- 1 can black beans, rinsed and drained
- 1 can sweet corn, drained
- 2 large tomatoes, diced
- 1/2 cup diced red onion
- chopped cilantro, to taste
- 2 limes, juiced
- salt & pepper, to taste
