Taco Pie

Brown hamburger with taco seasoning according to directions on taco seasoning
- 2 packages of crescent rolls (you can also purchase this in sheets now)
- 1 bag of corn chips (crushed)
- 16 oz sour cream
- 1 1/2 -2 pounds of hamburger (turkey or chicken)
- 2 packages of taco seasoning
- 4 cup package of Shredded cheese (your choice of type) if you prefer you could use less.

Needed to make a dish for us and the neighbors
- 2 lbs. ground beef (or chicken if you like)
- Small bag of Fritos
- 2 rolls of original crescent rolls (not butter)
- 2 pkgs of taco seasoning
- 1/2 cup water
- 1/2 cup salsa
- 1 can of refried beans
- 1-1/2 cup sour cream (more if you like)
- 1 cup guacamole
- 18 ozs of shredded Mexician blend cheese

1. Preheat oven to 350 degrees
- 1/4 cup butter
- 2/3 cup milk
- 1 package taco seasoning mix
- 2 1/2 cups mashed potato flakes (you could also use left over mashed potatoes and omit the butter and milk)
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup salsa
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1 cup sharp cheddar cheese, shredded
- Sour cream, optional

These AIP Beef Tacos are full of flavor and will leave you satisfied
- Taco Filling:
- 1 tsp pure pork lard
- 1 organic onion, chopped
- 1 lb ground beef {I've also made this same recipe with chopped pork loin chops - amazing}
- 1 organic carrot, shredded
- 1/2 cup organic black olives, cut in half lengthwise
- 1 1/2 tsp organic oregano
- 1/2 tsp organic garlic
- 1/2 tsp organic turmeric
- 1 tsp Maldon sea salt
- 1-2 tsp tamarind concentrate
- 1/2 organic lime, to squeeze over when finished
- Guacamole:
- 2 organic avocados, pit removed and fruit scooped out
- 1/4 organic red onion, diced
- 1 lime, zested and juiced
- Maldon sea salt, to taste
- Plantain tortillas {2 tortillas per person}, romaine leaves {2 leaves per person}, or endive leaves {4 leaves per person} - depending on your preference
- 1/4 of a head organic green cabbage, sliced

- 1 (1.25-ounce) package taco seasoning mix
- Frozen potato crowns (about 24)
- 8 slices American cheese
- 2 cups Mexican cheese blend, shredded

- ~~ For the honey lime tequila shrimp tacos ~~
- 2 pounds (454 g) raw shrimps, peeled and deveined
- 1 teaspoon coarse sea salt
- 2 tablespoons raw honey
- juice of 2 limes + 1 lime
- 1/2 cup tequila
- 1 medium onion, finely minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground chipotle (optional)
- 2 avocados, diced
- 1/2 head of red cabbage, thinly sliced
- ~~ For the slaw dressing ~~
- 1/4 cup (60 ml) freshly squeezed lime juice [about 2-3 limes]
- 1 teaspoon of Dijon mustard
- sea salt and pepper to taste
- 1/2 cup light, neutral oil, such as grapeseed
- ~~ For the chipotle crema ~~
- 1 cup (250 ml) sour cream or créme fraîche [low fat can be used]
- 1 to 2 pieces of chipotle chiles in adobo sauce [canned]
- ~~ For assembly ~~
- 12 – 15 homemade or store-bought good quality yellow or white corn tortilla

Fish Tacos San Diego Style

The fish for this recipe can be battered and fried or baked
- Sauce:
- 1 c. Mexican crema, or 1/2 c. plain yoghurt mixed with 1/2 mayo
- 4 tsps lime juice
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried dill
- 1/2 tsp dried oregano
- 1 tsp Mexican style hot sauce
- 1/2 tsp garlic powder
- 1/2 habenero chile, finely minced
- 1/4 fresh cilantro, chopped
- 1/2 tsp salt
- Ground white pepper to taste
- Fish:
- 1.5 lbs firm white fish such as cod or tilapia cut into long strips or chunks (if baking)
- Batter:
- 2 c. all purpose flour
- 1 bottle Mexican beer (your choice of flavor)
- 2 tsp salt
- Flour for dredging
- Oil for frying, if you're cooking the fish that way
- If you baking the fish:
- Oil
- Chili powder
- Cumin
- Salt
- Lime Juice
- For serving
- 8 8" flour tortillas
- Red cabbage, shredded. Rinse it well to prevent it from staining the sauce purple
