1. Combine tomatoes, chopped cilantro, green onions, garlic and jalapeño in medium bowl

- 1/3 cup chopped cilantro, plus 6 small sprigs for garnish

- 1 yellow onion
- 4 cloves of garlic (2 will suffice if you're not a garlic lover)

- 3 small Yukon gold potatoes
- 1/4 cup olive oil (plus maybe more to taste
