A honey-sweetened scone with a cinnamon-sugar topping
- Scone dough:
- 2 C all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 C unsalted butter, cold
- 1 egg, separating the egg white and yolk
- 3 tbsp honey
- 1/2 C buttermilk
- Topping:
- 2 tbsp granulated sugar
- 1/2 tsp ground cinnamon
- Glaze (optional):
- 1 C powdered sugar, sifted
- 1-3 tsp milk
- 1/2 tsp vanilla

- 2 cups all purpose flour
- 2 cups whole wheat pastry flour
- 2 Tablespoons granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 6 Tablespoons cold vegan butter such as Earth Balance for the dough
- 1 to 1-1/8 cup vanilla soy creamer

Meyer Lemon Poppy Seed Scones

These lemon poppy seed scones take only 10 minutes to make and super delicious with a cup of coffee or tea
- GLAZE:
- 2 cups all-purpose flour, lightly spooned into measuring cups and leveled with a knife
- 1/3 cup sugar

- 1/4 teaspoon baking soda
- 1/2 teaspoon table salt (decrease or omit if using salted butter)
- 1 teaspoon poppy seeds
- 8 tablespoons frozen unsalted butter (if using salted butter, cut down on salt)

- 1 large egg
- 1/4 teaspoon Pure Lemon Oil (optional)

- 1/2 cup oil, maybe a little less, see description
- 1 teaspoon vanilla
- 1 1/2 to 2 cups orange pulp. I used all the pulp from two huge oranges and one small tart green apple, juiced seeds, pulp and all except I cut off most of the orange skin, leaving lots of the white "stuff".
