Garlic Green Beans with Tomatoes

  • 1 lb gr. beans, trimmed and cut in 1 1/2” pieces
  • 1 tbs oil
  • 1 sm red onion, sliced
  • 1 tbs fresh basil
  • 2 cloves minced garlic
  • 2 tomatoes, diced
  • 1 tbs balsamic vinegar
  • 2 tbs water
  • 1/4 tsp salt & pepper

Step 1

In a saucepan, cook beans in salted boiling water for about 4 minutes. Drain and reserve water.

While the beans cook, sauté onions, garlic and basil in oil for 2 minutes. Stir in remaining ingredients and cook until sauce like, about 3 minutes. Add the beans and cover. Simmer about 15 minutes or until as tender as you like, adding more water as necessary to keep moist.
