Heat oil and butter in a heavy saucepan over medium heat
- 2 tablespoons neutral oil, such as safflower or canola
- 2 tablespoons unsalted butter
- 1 leek, cut into small pieces and rinsed in several changes of cool water
- 2 sticks celery, cut into small pieces
- 1 medium onion, finely sliced
- 4 cups boiling vegetable stock, plus more to thin, if needed
- 1 1/4 teaspoons salt, plus more to taste
- 1/2 teaspoon freshly ground white or black pepper, plus more to taste
- 1/2 teaspoon sugar, plus more to taste
- 2 (14-16-ounce) bags frozen peas, thawed
- Leaves from 1 head Bibb or 1 small head Boston lettuce
- 1/4 cup coarsely chopped parsley
- 1/4 cup fresh mint leaves
- 1/4 cup heavy cream or half and half
- Fried diced chorizo, pancetta, bacon or prosciutto, for garnish (optional)
- Small croutons, for garnish (optional)
- Chopped toasted hazelnuts, for garnish (optional)

Swiss chard stems have the same mineral flavor as the leaves, but lack their gloss and buoyant texture
- ANCHOVY VINAIGRETTE:
- 2 ounces anchovies (preferably salt-packed, cleaned, rinsed, and soaked in a few changes of milk -- see note)
- 1/2 ounce garlic, minced (about 3 small cloves)
- 3/4 cup + 4 teaspoons extra virgin olive oil
- 1/2 teaspoon red chile flakes, or more to taste
- GRILLED CHARD STEMS:
- Stems from 1 large bunch Swiss chard (save greens for another use)
- Extra virgin olive oil
- Salt and freshly ground pepper
- Anchovy Vinaigrette (above)
- Splash sherry vinegar

Mix all marinade ingredients
- 2 Ahi Tuna Steaks
- Marinade
- 1/4 cup olive oil
- 1/4 cup red cooking wine
- 1/4 cup water
- 3 T. low sodium soy sauce
- Juice of a lime
- 3 cloves garlic, minced
- 1 t. pepper
- 3 T. fresh grated ginger
- Kale and Red Peppers
- 2 T. olive oil
- 2 red bellpeppers, seeded and sliced
- 1 head of kale, stems removed and chopped
- 1 large shallot, minced
- 2 cloves garlic, minced
- 2 t. Chinese Five Spice
- salt and pepper

- 1 c. Kraft Real Mayonnaise
- 1 c. sour cream
- 1 envelope (.7 oz) Good Seasons Italian Dressing Mix
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
- 1 can (8 oz.) water chestnuts, drained, chopped
- 1/2 c. chopped red peppers
- Optional: Add 1/4 tsp. cayenne pepper, if desired.*
