Ingredients

  • Pineapple Salsa

    cups crushed pineapple

    jalapeno chili pepper, seeded, and finely chopped

    red pepper, deeded and diced

  • 1/2

    cup lite coconut milk

    large shrimp, peeled and deveined

Directions

Salsa Place pineapple, jalapeno, red pepper in bowl toss to combine season with lime jucie and salt refridgerate until ready to serve. Shrimp Combine coconut milk, lime juice, soy sauce, ginger and brown sugar in shallow bowel. Add shrimp toss to coat. Refridgerate one hour. Season shrimp with salt and pepper, grill on mid heat 3-4 minutes each side. Top with salsa garnish with cilantro.
