Ingredients

  • Topping:
  • 4 cups (8 ribs) chopped rhubarb
  • 3 cups thinly sliced strawberries
  • 2 tbsp lemon juice
  • 1 cup granulated sugar
  • 1 tsp freshly grated ginger
  • 2/3 cup oats, quick or instant
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/2 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 cup cold butter, diced

Preparation

Step 1

perheat oven to 350*F. Grease round, 2-quart baking dish.
Put rhubarb, strawberries, lemon juice and sugar into dish.Mix well with fingers. Sprinkle ginger over mixture. Mix again with a spoon.

To make topping, in a medium bowl, mix oats, flour, brown sugar, nutmeg, cinnamon and salt.Work butter into mixture with fingers until clumps disappear. Spread evenly on to fruit mixture, leaving 1/4 -inch border clear.(fruit will cook more evenly)
Bake 40 to 45 minutes or until fruit is bubbling and topping is golden brown.
