Cranberry-orange cornmeal muffins

Ingredients
- 1 1/2 c flour
- 1/2 c yellow cornmeal
- 2 t baking powder
- 1/4 t salt
- 1/4 c each milk, fresh orange juice
- 1 stick butter room temperature
- 3/4 c sugar
- 2 large eggs
- 2 t finely chopped orange zest
- 1 t vanilla
- 1 c plus 2 T dried Cranberries
- 2 T Brown sugar

Step 1
Combine flour, cornmeal, baking powder, and salt in a bowl. Combine the milk, and orange juice in a measuring cup.
Beat the butter on med. speed in the bowl of an electric mixer until light and fluffy. Gradually beat in the sugar, beat until very light, about 2 min. Add the eggs one at a time, mixing well after each. before adding the other. Add orange zest and the vanilla. mix well. Fold in half of the flour mixture of a spatual, fold in half of the liquid. REpeat wtih the remaining flour mixture and liquid. Fold in the cranberries. Do not overwork the batter
Pour batter into a greased 12 muffin tin, making sure to get an equal amount of cranberries into each cup. Evenly sprinkle the brown sugar on top. Bake until golden.
Bake 30 min.
Serve warm or at room temp.
