Blueberry Cookies-Chocolate Dipped

Ingredients

  • DIPPING CHOCOLATE:
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 2/3 cups sifted flour
  • 1 cup dried blueberries
  • 1 cup semisweet chocolate chips
  • 1 teaspoon coconut oil

Preparation

Step 1

Beat together all ingredients except flour and blueberries. Gently mix in flour, then add the blueberries. Dough will be very soft and sticky.

Heat oven to 350°F.

Drop dough by tablespoons on cookie sheet and flatten slightly.

Bake for 8-10 minutes, until set around the edges, but still slightly wet in the center.

Let cool on pan for several minutes, then remove to a wire rack or counter top.

Let cool completely.

Dipping Chocolate:

Melt the chocolate and coconut oil together over low heat, stirring constantly to prevent burning.

Dip the cookies in the chocolate and set on waxed paper to cool.

These may need to be refrigerated to harden completely.

Store in air-tight container at room temperature or in the refrigerator for up to a week.
