Spicy Papaya/ Pineapple Shrimp

Sweet and Spicy, wonderful on the Barbeque. Adapted from Sportspage Restaurant in Roseville Ca
Ingredients
- Marinade:
- 2-3 lbs 16-21 Count Shrimp
- 1 Papaya diced
- 3 C pineapple juice
- 3 T lemon juice
- 3 T lime juice
- 1 Jalapeno diced finely
- 2 T soy sauce
- 3 T honey
- 3 T chopped cilantro
- Skewers:
- 2 c pineapple chunks
- 1 red onion cut in quarters and separated
- 1 green bell pepper cut to squares
- 16 wooden skewers soaked in water

Step 1
Blend Marinade in processer or blender, Heat Marinade till liquid is reduced in half, cool, (in ice bath), set 1/2 cup aside for dipping. Let shrimp marinate in the rest at least 1 hour, preferably longer. Place on skewers alternating with onion and bell pepper and pineapple chunks. Double skewering works best. Grill 3 min per side brushing with marinade often.
Serve with Rice, Barbequed Yellow Squash, pineapple slices and Salad
*times don't include marinating
