Roasted Adobo Chicken

Place chicken in roasting pan (or on the rack in a tabletop roaster)
- 5 lb whole chicken, cleaned and dried
- 1/2 stick of butter cut into tablespoons
- 3 T. Adobo seasoning (this can be found at the local grocery store)
- 1 T. garlic powder
- 1 lemon, cut in half
Creamy Chicken and Asparagus

- 2 chicken breasts, chopped
- 3 strips of bacon, chopped
- 2 T. coconut oil or butter
- 3 shallots, minced
- 2 cloves of garlic, minced
- 1 bunch of asparagus, chopped
- 1 can coconut milk
- pinch of pepper
- 1 T. cumin
- 2 t. paprika
Pot Roast & Roasted Veggies

Cooked in the crock pot
- 5-6 lb beef or pork roast
- 2 T. cumin
- 1 T. green chile powder
- 2 T. adobo seasoning
- 3 cloves garlic, minced
- 1/2 yellow onion, rough cut
- 1 lg zucchini
- 2 small sweet potatoes, peeled and chopped
- 2 small bell peppers, seeded and sliced
- 1 cup baby carrots (or slided carrots)
Chicken and Sweet Potatoe Stoup

Thicker than a soup but not as thick as a stew
- 4 chicken breasts, cubed
- 2 T. olive oil
- 1 large yellow onion, sliced
- 3 cloves of garlic, minced
- 2 large sweet potatoes, peeled and cubed
- 2 cups chopped celary
- 32 oz low sodium chicken broth
- 1 can coconut milk (or 1 1/4 cup heavy cream)
- 2 bay leaves
- 1 bunch of tyme (or 2 t. ground)
- 1 bunch of rosemary (or 2 t. ground)
- 1/4 t. fresh grated nutmeg
- 1 t. ground sage
- salt and pepper to taste
- 1 T. kutu or arrow root starch (or cornstarch) in water to dissolve
- Any other veggies you desire
Creamy Crockpot Italian Chicken

- 2-3 lbs chicken cutlets
- 15.9 oz can stewed diced tomatoes
- 1 T. oregano
- 1 T. basil
- 3 cloves garlic, minced
- 1/2 onion
- 2 pinches sea salt
- 2 pinches pepper
- 1/2 cup ricotta cheese (optional)
Squash Medley

Toss squash, zucchini and onions with seasonings
- 2 acorn squash cut into cubes
- 2 zucchinis cut into cubes
- 2 cup chopped kale
- 1 yellow onion sliced
- 1 cup sliced cherry tomatoes
- juice of a lemon
- 1/4 cup chicken stock
- 2 T. olive oil
- 1 T. autumn spice (or all spice)
- 2 t. pumpkin pie spice
- salt and pepper

- 12 oz jar fire roasted peppers, cut into strips plus juice
- 1/4 cup chopped sun dried tomatoes
- 1 cup 100% orange juice

Asian Spiced Boneless Ribs

Mix marinade ingredients and place in a sealable bag with the ribs
- 3 lbs boneless beef or pork ribs
- Marinade
- 1/4 cup olive oil
- 1/2 cup water
- Juice a and zest of large lemon
- 2 T. soy sauce
- 3 T. fresh grated ginger
- 1 T. Chinese 5 Spice
- 2 T. fresh cilantro, chopped
- 1 T. chili paste

Mix meat, Worcestershire sauce, garlic, green chile, and spices
- 2 lbs lean ground beef or bison
- 3 cloves garlic, minced
- 1 red or green bell pepper, seeded and chopped
- 4 green onions, chopped
- 1/2 c. cherry or cherub tomatoes
- 2 c. fresh spinach
- 4 roasted green chiles, peeled, seeded and chopped
- 3 T. Worcestershire sauce
- 2 eggs beaten
- Few pinches pepper
- Few pinches sea salt
- 2 T. green chile powder
- 1/2 c. Munster, aged cheddar, fresh mozzarella or other cheese

In a large pan, saute onions and garlic in olive oil for about 1 minute over medium high heat
- 1 12 oz steak (in cut of your choice), cut into cubes
- 3-4 shallots, minced
- 3 cloves of garlic, minced
- 1 T. olive oil
- 1/4 cup Sherry cooking wine (optional)
- 3 T. worcestershire sauce
- 2 cups chopped kale
- Salt and pepper to taste
