You Name It Veggie Mix

Saute onion in olive oil until it begins to get translucent
- 1/2 a red onion
- 2 T. olive oil
- 3 cloves of minced garlic
- 1 yellow squash, cut into half circles
- 1 zucchini, cut into half circles
- 1 bunch of asparagas, cut into pieces
- 2 cups cherry tomatoes, cut in half
- 2 cups fresh spinach
- (add different or additional veggies as desired)
- salt and pepper to taste
- 1 T. cinnamon
- 1 T. Veggie Bombay (or All Spice)
Crock Pot Baby Back Ribs

Add all ingredients to a crock pot and cook on low for 6-8 hours
- 2 racks baby back pork or beef ribs, cut into sections (2-4 ribs per section)
- 1/4 cup Frank's Red Hot Original (other versions have additives)
- 1/4 cup pure honey
- 6 oz can tomato paste
- 1/4 yellow onion, minced
- 3 cloves garlic, minced
- 1 T. onion powder
- 1 T. green chile powder
- 2 Pinches of sea salt
- 2 Pinches of pepper
Strawberry Spinach Salad

For Raspberry Vinaigrette use a store bought dressing or make it by mixing 1/2 cup raspberries, 3 T
- 2 - 3 T. raspberry vinaigrette (see directions below)
- juice and zest of one lemon
- pinch of salt and pepper
- 1 cup of sliced strawberries
- 1/4 cup toasted slivered almonds
- 4 cups spinach. Drizzle with dressing
Green Bean and Tomato Broil

Mix green beans, shallots, tomatoes, and almonds
- Large bunch of fresh green beans
- 4 large roma tomatoes, sliced
- 4 large shallots, sliced
- 2 handfuls of Marcona almonds
- olive oil
- 1 1/2 T. Bombay Veggie seasoning
- 2 t. garlic powder
- salt and pepper
Paprika Chicken

Season each side of the chicken breasts with the spices listed
- 2 boneless, skinless chicken breasts
- 1/4 t. salt
- 1/2 t. pepper
- 2 t. paprika
Mandarin Orange & Almond Salad

Mix greens together. Mix 1 t
- 2 cups spinach
- 2 cups arugula
- 1 can mandarin oranges (drained but reserve the juice for dressing)
- 1/2 cup sliced almonds
- 1-2 t. olive oil
- 1 t. sea salt
- 1 t. cracked pepper
- 3 T. olive oil
- 2 T. juice from mandarin oranges
- 1 T. champagne vinegar
- pinch of sea salt and pepper
Blueberry Coconut "Fudge"

Paleo and clean eating treat
- 1 cup Organic coconut butter, melted (ensure there is no sugar added)
- 1/2 cup fresh blueberries, washed and dried (you can use chopped strawberries as well)
Cranberry Fruit Cocktail

Drain juices from cans of fruit and mix with water in a medium cooking pot
- 2 12 oz bags fresh cranberries
- 1 20 oz can pineapple chunks, in their own juice
- 1 15 oz can mandarin oranges, in their own juice
- 1/2 cup fresh blueberries
- 1/4 cup water
- 1-2 T. agave nectar or honey
- Juice and zest of one lemon
Scalloped Sweet Potatoes

Mix sweet potatoes, onions, and spices
- 3-4 large sweet potatoes, sliced thin
- 1 medium yellow onion, sliced
- 2 cans of coconut milk, mixed with 1 T. arrow root starch (for thickening)
- 1 T. pumpkin pie spice
- salt and pepper
- 1 cup of your favorite cheese (optional)
Green Chili Pork Chops

Mix dry ingredients and rub on pork chops
- 4-6 pork chops, bone-in or boneless (if thick cut will just cook longer)
- 1 T. ground cumin
- 1 T. green chili powder
- 2 t. onion powder
- 1 t. salt
- 1 t. pepper
- 3 cloves of garlic, minced
- 1/2 yellow onion, sliced
- 5 roasted, peeled and chopped green chilis (or 1 small can)
