Ingredients

  • 2 acorn squash cut into cubes
  • 2 zucchinis cut into cubes
  • 2 cup chopped kale
  • 1 yellow onion sliced
  • 1 cup sliced cherry tomatoes
  • juice of a lemon
  • 1/4 cup chicken stock
  • 2 T. olive oil
  • 1 T. autumn spice (or all spice)
  • 2 t. pumpkin pie spice
  • salt and pepper

Preparation

Step 1

Toss squash, zucchini and onions with seasonings. Saute in 2 T. olive oil until it begins to soften (about 10 minutes). Add chicken stock, lemon juice, and kale and cook another 3 minutes. Add tomatoes and cook another minute or two.
