Peanut Butter Chocolate Fudge

This is a family favorite recipe for chocolate peanut butter fudge
- 2 cups sugar
- 1/2 cup milk
- 3/4 cup peanut butter
- 1 teaspoon vanilla
- 1/2 cups dark chocolate chips, melted
Italian Flag Pizza

Preheat oven to 425 F. Top pizza crust with sauce, then prosciutto and mozzarela
- Prepared pizza dough
- 1/4 cup marinara or pizza sauce
- 6 slices prosciutto
- 1 roma tomato sliced
- 5-6 slices fresh mozzarella
- Fresh arugula
Spicey Taco Meat

Heat oil on medium heat in a large pan
- 1 lb ground bison (or ground beef)
- 1 T. olive or coconut oil
- 1/4 yellow onion, chopped
- 3 green chilis, roasted, peeled and chopped
- 1 large red bell pepper, seeded and diced
- 3 cloves garlic, minced
- 1 T. cumin
- 1 T. green chili powder
- pinch of sea salt
- pinch of pepper
- 14.5 oz can organic diced stewed tomatoes
Citrus Rasberry Sorbet

Paleo treat
- 1 can frozen pinapple, orange, banana juice (100% juice)
- 16 oz package frozen raspberries
- Juice and zest of a lemon
- 1-2 T. agave nectar
Southwest Deviled Egg and Bacon Sandwich

Leave off the bread and make it Paleo
- 8 hard boiled eggs, cut or mashed up
- 1/2 can green chilis
- 3 T. spicy mustard
- 2 T. organic mayonaise
- 1/2 T. smoked paprika
- 1/2 T. cumin
- pinch of salt
- 1 t. cayene pepper (optional)
- 6-8 strips cooked bacon
- 8 slices of toasted bread or 4 bagels
Roasted Red Pepper & Avocado Salad

- 2 roasted red peppers, diced
- 1 avocado, diced
- juice of one lime
- 1/4 cup feta cheese (optional)

Dark Chocolate Coconut Bark

Paleo and clean eating treat, this dark chocolate and coconut bark is easy to make
- 1/2 cup organic coconut butter (make sure is no sugar added), slightly melted
- 1/8 cup dark chocolate, melted
Chili Cilantro Pasta

- 12 oz Chili Cilantro Linguine (or other linguine)
- 4 chopped and seeded Roma tomatoes
- 4 chopped green chilis
- 3 cloves garlic
- 2 - 3 shallots diced
- 2 T. olive oil
- Juice and zest of 1 large lime
- 1/3 c. low fat or skim ricotta
- Salt and pepper to taste
- Parmesean cheese (for garnish)
- Fresh chopped cilantro (garnish)
Stuffed Roasted Red Peppers

Cut tops off of the bell peppers and discard the seeds and stem
- 4 red bell peppers
- 2 large chicken breasts (no skin), boiled or grilled, chopped (Cheat Option: use chicken from a roasted chicken at the local market)
- 2 T. coconut oil
- 1 large shallot, minced
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 cup arugula (spinach will work also)
- 1 T. Veggie Bombay seasoning
- Pinch of pepper
- Pinch of sea salt
- 1/2 cup shredded cheese (optional)
Apple Cider Pork Loin

- 3 lbs pork loin
- 1/2 yellow onion, sliced
- 2 cloves garlic, minced
- 3 Fuji or similar apples, cored and sliced
- 1/4 cup apple cider vinegar
- 1/2 cup water
- 2 t. cumin
- 2 t. Allspice
- pinch of sea salt
