Lime Cilantro Chicken

In a food processor or blender, chop onions and cilantro, then add the rest of the marinade ingredients and blend
- 6 large boneless, skinless chicken breasts
- Marinade
- Juice of 5 limes
- Zest of 2 limes
- 1/2 bunch of cilantro, rough chopped
- 4 green onions, rough chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- pinch of sea salt
- pinch of pepper
Coconut Shrimp & Chicken Curry

Paleo friendly version of shrimp and chicken coconut curry
- 2 chicken breasts
- 1 pound shrimp, peeled and de-veined
- 2 medium shallots, diced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons ginger, minced
- 2 teaspoons powdered ginger
- 3 1/2 tablespoons curry powder
- 2 teaspoons cilantro
- 1 cup chicken broth
- 2 (15-ounce) cans coconut milk
- Juice of a lemon
- 1 can El Pato (or 3 tablespoons tomato paste and 1 to 2 pinches red chili flakes)
- Pinch salt and pepper
- 1 cup unsweetened coconut
- 4 green onions, diced, optional for garnish
21-Spice Roasted Chicken

Clean and dry chicken. Place it in a roasting pan
- 1 whole chicken
- 1 large lemon, cut in half
- 4 T. butter
- 1/2 yellow onion, cut into large pieces
- 3 T. 21-Seasoning Salute (Trader Joe's)
- Pinch of sea salt and pepper
Vanilla Cinnamon Steel Cut Oats

In a medium pot, add all ingredients and bring to a boil over medium high heat
- 1 cup steel cut oats
- 3 cups water
- 1 t. vanilla bean powder (or vanilla from the inside of one whole bean)
- pinch of sea salt
- 1 t. cinnamon
- 1 cup coconut milk
Orange Peel Pork Roast

Place pot roast in crock pot and top with all ingredients
- 4-5 lb pork loin roast (or any roast cut)
- Juice and zest of an orange
- 1/4 red onion, diced
- 3 cloves garlic, minced
- 2 t. oregano
- 1 t. cinnamon
- 1/8 t. nutmeg (I shave a little whole nutmeg over the roast)
- 2 t. cumin
- 1 t. rosemary
- pinch of sea salt
- pinch of pepper
All the Leftovers Turkey Pot Pie

This is a great way to use your leftovers
- 2 9" pie crusts
- 2-3 cups of turkey
- 1 1/2 cups gravy
- 1/2 cup cranberry sauce
- 1 cup sweet potaotes
- Any other left over veggies
- 1 cup stuffing
- (Add to or take away any items you do not have or want in the pie making sure to have a good distribution of wet and dry items.)
Romaine and Brussel Sprout Salad with Cilantro Lime Vinaigrette

Toss all ingredients and serve
- 8 oz hearts of romaine, chopped
- 10 brussel sprouts, peel and use the leaves
- 2-3 avacados, chopped
- 4 pieces of crisp bacon, chopped
- Cilantro Lime Vinaigrette (see my recipe in my cookbooks)
Chocolate Coconut Bread Pudding

Coconut milk is a rich and creamy substitute for high fat cream
- 1/2 ½ pound loaf of Kosher Challah Bread (find at Trader Joes) – cut into cubes
- 1/2 ½ pound coconut bread (find at Asian Market) – cut into cubes
- 3 1/4 3 ¼ cups coconut milk
- Zest of one orange
- 1/4 ¼ cup coffee-flavored liqueur (can substitute with coffee or chocolate extract)
- 1/4 ¼ cup orange liqueur (can substitute with orange extract)
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 2 teaspoons pure almond extract
- 1 1/2 teaspoons pumpkin pie spice
- 6 large eggs, lightly beaten
- 1/2 ½ cup unsweetened shredded coconut
- 8 ounces dark chocolate chips
Southwest Pepper Steak

Place all ingredients in crockpot and cook on low for 4-6 hours
- 2 large sirloin steaks, cut into strips
- 14.5 oz can diced tomatoes
- 7 oz can El Pato Original (yellow can)
- 2 bell peppers, seeded and sliced (any color)
- 4 roasted green chile peppers, peeled, seeded, sliced (or 4 oz can)
- 1/2 yellow onion, sliced
- 3 cloves garlic, minced
- 2 t. cumin
- 1 t. green chile powder
- 1/4 t. cinnamon
- pinch or two of sea salt
Asparagus & Peppers with Roasted Chicken

Mix veggies and spices and steam for about 5-7 minutes
- 6 - 8 oz roasted chicken
- 1 red pepper, seeded and sliced
- 1 green pepper, seeded and sliced
- 1 bunch of asparagus spears, chopped
- 1/4 red onion, sliced
- 1 cup cherry or cherub tomatoes
- 2 t. autumn spice
- Pinch of sea salt and pepper
