Green Beans and Almonds

Mix all ingredients and place in a baking dish
- 24 oz fresh green beans
- 6 pieces of bacon, cooked and chopped and drippings
- 1/2 cup marcona almonds
- pepper and a pinch of salt
Chilled Squash Salad

Steam the squash and onions until softened
- 1 medium squash (zucchini, summer, or other), chopped
- 1/2 red onion, halved and sliced
- 1 cup cherry tomatoes
- 1 T. fresh cilantro, chopped
- 2 t. veggie bombay seasoning
- pinch of salt and pepper
- 1/8 cup crumbled feta cheese (optional)
Chicken Rub

Mix all ingredients and rub onto chicken before cooking
- 1 T. Autumn Spice (if you can't find this you can use All Spice or other similar spice mix)
- 1 t. onion powder
- 1 t. garlic powder
- 1/8-1/4 t. cayenne pepper
- 2 t. green chili powder
- Pinch of sea salt
- Pinch of pepper
Mongolian Surf and Turf

Paleo friendly
- 1/2 lb sirloin or tenderloin, cut into small pieces
- 15-20 uncooked shrimp, peeled and deveined
- 1 T. olive oil
- 1/2 red onion, chopped
- 2-3 cloves garlic, minced
- 2 T. fresh grated ginger
- 1 1/2 T. Thai seasoning
- salt and pepper
- 1-2 t. red chili paste (optional)
- 12 oz broccoli slaw
- 1/2 cup low sodium, beef broth
- 1 cup fresh spinach
- 8 oz frozen snap peas, thawed
- 2-3 green onions chopped (only the green portion)
- Juice of half a lemon
Avocado & Pear Salad

Avocado Dressing Mix all ingredients in a blender
- Avocado Dressing
- 2 avocados
- 1/8 c. olive oil
- 1/4 c. water
- Juice and zest of two large limes
- 2 t. dried cilantro
- 2 t. garlic powder
- salt and pepper
- Salad
- 3 stalks romaine hearts cut up
- 1 cucumber peeled and diced
- 2 avocados diced
- 1/2 c. pecans, rough chopped
- 2 bartlet pears chopped, juiced with 1/2 of a lime
- salt and pepper
- 1/4 c. feta (optional)
Go Green Salad

Blend the Green Goddess dressing ingredients together
- Green Goddess Dressing Ingredients
- 1 avocado
- 2 T. chili oil
- 1/4 cup olive oil
- 2 T. dried cilantro
- 2 t. cumin
- 1 t. garlic powder
- Juice of one lime
- 1/4 - 1/2 t. cayene pepper (to desired heat)
- Pinch of sea salt
- 3-4 T. water (to thin as desired)
- Salad
- 2 cups spinach
- 2 cups mixed greens (I found a spicy mix)
- 2 green onions, diced
- 1/4 cup roasted pistachios
- 1/4 cup shredded Havarati cheese, optional (I found Havarati Dill at Whole Foods)
- 1/2 cup green grapes, sliced in half
- 2 kiwi fruits, peeled and sliced
Paleo Apple Blueberry Pie

Heat oven to 375 F. Grease a 9" pie plate
- Crust
- 1 cup almond flour
- 1/8 cup honey
- 3 T. water
- Pie
- 5 gala apples peeled, cored, and sliced
- 1 cup dried blueberries
- Juice of a lemon
- 1/4 cup unsweetened coconut
- 1/2 cup coconut milk (canned - it is thicker)
Cranberry Sauce

Place water, juice, and zest in pot and bring to boil
- 6 cups whole cranberries
- 1 c water
- ½ c 100% orange juice
- Juice and zest of 2 oranges
- 2 t. pumpkin pie spice
- 1 t. vanilla
- 2 T. Agave nectar (optional if additional sweetness is desired)
Green Goddess Dressing

- 1 avocado
- 2 T. chili oil
- 1/4 cup olive oil
- 2 T. dried cilantro
- 2 t. cumin
- 1 t. garlic powder
- Juice of one lime
- 1/4 - 1/2 t. cayene pepper (to desired heat)
- Pinch of sea salt
- 3-4 T. water (to thin as desired)
Raspberry Vinaigrette

- 1/2 cup raspberries
- 3 T. olive oil
- 1 T. apple cider vinegar
