Roasted Adobo Chicken
- 5 lb whole chicken, cleaned and dried
- 1/2 stick of butter cut into tablespoons
- 3 T. Adobo seasoning (this can be found at the local grocery store)
- 1 T. garlic powder
- 1 lemon, cut in half
Place chicken in roasting pan (or on the rack in a tabletop roaster). Slip the butter between the skin and the breast meat, spacing it evenly around. Place the lemon in the cavity of the bird. (I squeeze it a bit before I put it in to get the juices going.) Sprinkle the skin with the seasoning.
Roast at 375 F for ~2 hours or until the internal temperature reaches 165 to 170 F.
