Coconut Macaroons

- 3 cups unsweetened shredded coconut
- 1 t. almond extract
- 1 t. vanilla
- 1/8 teaspoon salt
- 3/4 cup coconut milk
- ¼ cup honey
- 3 egg whites, stiffly beaten
- 1 t. cream of tartar
Arizona Scramble

Saute onion in butter over medium high heat until it becomes translucent, about 2 minutes
- 6-8 eggs beaten
- 2 T. butter
- 1/4 red onion, chopped
- 1 cup fresh spinach
- 1/4 cup diced green chili
- 1 roma tomato, diced
- 1 avocado, sliced
Blue Razzle Pie

In a large pot heat frozen berries, water, and sugar and bring to a boil
- 2 Pie Crusts (see my recipe)
- 1 cup frozen raspberries
- 1 cup frozen blueberries
- 1/2 cup water
- 1 cup sugar
- Juice and zest of a lemon
- 2 T. cornstarch mixed with cold water for thickening
- 1 cup fresh raspberries
- 1 cup fresh blueberries
Coconut Fried Chicken

- 3-4 lbs of chicken (any parts you like - skin on or off)
- 1 cup coconut milk
- 2 T. vinegar
- 1 T. paprika
- 1 T. garlic powder
- salt and pepper
- Coating

Cran-Apple & Walnut Salad

Mix vinaigrette ingredients
- Salad
- 3 gala or fugi apples, cubed
- 3 cups spinach
- 1 1/2 cups baby romaine
- 1/4 cup walnuts, roughly broken
- 1/4 cup dried cranberries
- 1/8 cup feta cheese
- Orange Vinaigrette
- 1/8 cup olive oil
- 1/8 cup orange champagne vinegar (if you can’t find this mix a little orange juice with a little champagne vinegar)
- Zest of an orange
- Juice of a lemon
- 1 t. cinnamon
- Salt and pepper
Apple Feta Salad

- 3 cups mixed greens
- 3 T. balsamic vinegar
- 3 T. olive oil
- pinch of pepper
- 1/4 cup feta cheese
- 1 apple, seeded and chopped
- 1/8 cup coarse chopped pecans
Lemon Bars

- Crust
- 2 c. almond flour
- ¼ c. melted butter
- ¼ c. agave nectar
- Filling
- 3 eggs beaten
- Zest of 2 lemons and the juice of 3
- Juice of a large orange
- 1/8 c. agave nectar
- 1 t. baking powder
- 1/8 c. plus 2 T. coconut flour
Gooey WOWza Bars

Preheat oven to 350ºF. Stir flour and almond meal with baking soda and salt; set aside
- Cookie Bar
- 1 ¼ cups flour
- 1 cup almond meal
- 1 t. baking soda
- ½ t. salt
- 1 cup butter
- ¾ cup sugar
- ¾ cup brown sugar
- 1 ½ T. vanilla paste
- 2 eggs
- 1 T. espresso powder
- 2 cups semi-sweet or dark chocolate chips
- 1 cup chopped pecans
- Peanut Butter Cream
- 7 oz. marshmallow cream
- 1 cup peanut butter
- ½ cup shredded coconut
Sour Cherry Chicken

In a large skillet, heat oil and cook shallots about 1 minute
- 1 T. olive oil
- 2 large chicken breasts, cubed
- 2 large shallots, minced
- 3 cloves garlic, minced
- pinch of salt and pepper
- 1/2 cup peanut butter
- 1 cup sauerkraut
- 1 cup frozen cherries
- Juice and zest of large orange
- 1 t. allspice
- 1 t. vanilla
Pumpkin Mousse

- 8 oz mascarpone cheese (or cream cheese)
- 1/2 cup pumpkin puree
- 2 t. pumpkin pie spice
- 2-3 T. honey
- 1 t. vanilla
