Beef Stew

Place all ingredients in a crockpot except thickener and cook on low for 6-8 hours
- 2 lbs cubed stew meat
- 4 cloves garlic, minced
- 1/2 lg red onion, sliced
- 1 bunch of asparagus, chopped
- 2 large carrots, peeled and sliced
- 1 large zucchini, sliced
- 2 cups chopped kale
- 1 lg red bell pepper, seeded and chopped
- 2 T. cumin
- 2 pinches sea salt
- 2 pinches pepper
- 2 bay leaves (remove before eating)
- 32 oz can stewed tomatoes
- 2 t. oregano
- 1 - 2 T. kuzu root (mixed in cold water) to thicken
Mexican Stir Fry (Fajitas)

In a large skillet heat olive oil on medium heat
- 1.5 lbs lean beef or chicken, cut into strips
- 1 T. olive oil
- 4 cloves garlic, minced
- 1/2 red onion, sliced
- 2 bell peppers, any color, sliced
- 5-6 green chilis, roasted, seeded and peeled (or 1 can, drained)
- 1 14.5 oz can diced tomatoes
- Juice of one lime
- 1 T. fajita seasoning
- 1 T. green chili flake
- 1 t. cilantro
- salt and pepper
Strawberry Banana Smoothie

- 7-8 large strawberries
- 1/2 banana
- 1/4 cup egg white protein
- 1/2 cup coconut milk
- 5-7 ice cubes

- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 1 cup flour
- 3 tablespoons melted butter
- Butter, for coating the pan
Huckleberry BBQ Sauce

I made this with huckleberry syrup but you can use any variety if you can't get huckleberry
- Meat:
- 4-6 lbs boneless beef ribs
- 1/2 large chopped white onion
- Salt and pepper
- For BBQ Sauce:
- Small can of tomato paste
- 1/4 cup apple cider vinegar
- 1/4 cup huckleberry honey (or agave nectar, regular)
- 10 oz huckleberry syrup (or chokecherry, prickly pear, or other flavor)
- 1/4 cup water (use it to clean out the syrup bottle and add to sauce)
- 1/4 cup olive oil
- 4 cloves minced garlic
- 3 T. cumin
- 2 t. cinnamon
- 1-3 t. cayenne pepper (optional to taste)
- Salt and pepper
- Cook ribs and onion at 350 ºF for about 30 minutes. Add about half of the BBQ sauce and cook for another 3-4 hours. Add extra sauce and serve.
Fire Roasted Pepper Chicken

Heat olive oil (or butter) over medium heat
- 4 chicken breasts sliced into strips
- 2 T. olive oil or butter
- 1 small yellow onion, sliced
- 3 cloves garlic
- 4 red and/or orange bell peppers, roasted on grill or under broiler and sliced
- 6 roma tomatoes, cut into 4 quarters then roasted on grill or under broiler
- 14.5 oz can diced tomatoes
- 1/4 cup chicken broth
- salt and pepper to taste
- 2-3 t. crushed red peppers (optional)
- 3 t. oregano
- 3 t. basil
White Fish & Spinach Bake

Missing Chilean food so this recipe came to mind
- 2 white fish steaks (barramundi,halibut,or other)
- 2 T. extra virgin olive oil
- 2 cups fresh spinach
- 1 cup sliced mini peppers in assorted colors
- 1/4 yellow onion, rough chopped
- 1 14 oz can stewed tomatoes
- 2 t. garlic powder
- 2 t. sea salt
- 2 t. pepper
- 1 T. ground Cumin
- 2 T. fresh chopped cilantro
- Juice of half a lemon
Green Chicken Curry

Put all ingredients except the coconut milk and matcha powder in a crockpot and cook on low for 5-6 hours
- 3-4 lbs of boneless, skinless chicken (breasts, thighs, or combo), chopped
- 2 T. butter
- 4 cloves of garlic, minced
- 2 T. fresh grated ginger
- 1 1/2 t. tumeric
- 2 T. lemongrass (or 1 T. of paste)
- 1 T. curry powder
- 2 t. cumin
- 1 T. fresh chopped tarragon (or 2 t. dried)
- 1-3 t. chili flakes (depending on how hot you want it)
- 2 T. fresh cilantro leaves, chopped
- 1 bunch of green onion, chopped
- 2 large carrots, sliced
- sea salt and pepper to taste
- 6 oz of coconut milk
- 1 T. matcha powder
Easy Teriyaki Chicken Bacon Wraps

Wrap chicken with bacon and stick a tooth pick through to hold the bacon in place
- 1 lb chicken, cut into small cubes
- 1 pkg of bacon, cut slices into thirds
- 1 bottle of teriyaki sauce
- 1 lg can pineapple chunks
Chicken and Veggie Soup

Bring chicken broth to a boil
- 32 oz chicken broth
- 2 -3 cooked chicken breasts, meat removed and diced or shredded
- Small package of frozen asparagas
- Small can of green chilis (or 5 fresh, roasted and chopped)
- 5 green onions, chopped
- 1 handful of chopped, fresh cilantro (optional)
- 2 cups kale leaves
- 2 t. garlic powder
- 1 T. Veggie Bombay
- salt and pepper to taste
