Cheeseburger Bake

Mix meat, Worcestershire sauce, garlic, green chile, and spices
- 2 lbs lean ground beef or bison
- 3 cloves garlic, minced
- 1 red or green bell pepper, seeded and chopped
- 4 green onions, chopped
- 1/2 c. cherry or cherub tomatoes
- 2 c. fresh spinach
- 4 roasted green chiles, peeled, seeded and chopped
- 3 T. Worcestershire sauce
- Few pinches pepper
- Few pinches sea salt
- 2 T. green chile powder
- 1/2 c. Munster, aged cheddar, fresh mozzarella or other cheese
Walnut Asparagus Pesto

Pulse all ingredients except olive oil in a food processor until blended
- 1 1/2 cup fresh spinach
- 1/2 cup arugula, removed from stems
- 8-10 asparagus, steamed
- 1/2 cup toasted walnuts
- 1 avocado
- Juice of two limes
- 1/3 cup olive oil
- salt and pepper
Lemon Chicken and Artichokes

In a large skillet, melt butter over medium high heat
- 2 boneless, skinless chicken breasts, cubed
- 2 T. butter
- 1 large shallot, minced
- 4 cloves of garlic, minced
- 1 t. dried oregano
- 1 t. dried basil
- 8 oz frozen artichoke hearts, cut in half and mostly thawed
- 1 T. capers, drained
- 2 fire roasted red peppers, chopped
- Juice of 4 lemons, plus zest of 2
- salt and pepper
- 1/4 cup low sodium chicken broth
Eggplant Ragout

In a large skillet, heat oil on medium heat
- 1 1/2 lbs lean ground pork
- 2 large shallots, minced
- 3 cloves garlic, minced
- 1 T. olive oil
- 1 lb 12 oz can diced tomatoes
- 1 medium eggplant, peeled and cubed
- 3 cups fresh spinach
- 1 t. dried thyme
- 1 T. dried oregano
- 1 T. dried basil
- 2 t. onion powder
- salt and pepper
Sweet & Spicy Beef Short Ribs

Put all ingredients into a crock pot on low and cook for 6-8 hours
- 2 lbs boneless beef short ribs
- 1/2 onion chopped
- 4 cloves garlic, minced
- 1 t cinnamon
- 1/8 cup honey
- 1/4 cup Frank's Red Hot Original (this one doesn't have funky ingredients)
- sea salt and pepper to taste
- Cornstarch or other thickener to thicken sauce as desired
Eric's Breakfast Tostadas

Eliminate the tortilla and cheese and make it Paleo friendly
- 2 small flour torillas
- 3 T. chili olive oil
- 1/4 cup cheddar cheese
- 2 eggs cooked over easy, seasoned with salt and pepper
- 4 oz pork chorizo, cooked and crumbled
- 2 slices of Canadian bacon, grilled
- 1/2 avocado, sliced
- arugula for garnish
Fall Chicken Soup (Baked)

Mix all veggies and chicken in a large bowl
- 3 chicken breasts, diced (you can also use chicken thighs or legs)
- 1 large sweet potato, peeled and diced
- 1 large zucchini, cut in half and sliced
- 2 cups mushrooms, sliced
- 1 bunch of asparagus, chopped
- 1/2 red onion, sliced
- 4 cloves minced garlic
- 2 t. ground thyme
- 2 t. rosemary
- 1 T. oregano
- 1 T. all spice
- few pinches sea salt
- few pinches pepper
- 12 oz can coconut milk
Chicken Squash Bowls

Slice an acorn squash in half (longways - from stem to bottom, not around the middle)
- 1 acorn squash
- juice and zest of an orange
- pinch of salt and pepper
- 1 T. All Spice

- 2 chicken breasts seasoned with salt and pepper and smoked paprika
- 2 T. olive oil
- 1/2 of a yellow or red onion
- 2 cloves minced garlic
- 1 cup diced butternut squash
- 1 cup diced zucchini
- 1 cup diced yellow squash
- pinch of salt and pepper
- 2 t veggie seasoning

Ginger Shallot Marinade

- Large ginger root, peeled and chopped
- 2 large shallots chopped
- 3 cloves of garlic
- 5-7 fresh basil leaves
- Juice of one lime
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup water
- Salt and pepper
