Strawberry Cucumber Salad

Place strawberries and cucumber and cheese on bed of spinach and salad greens
- 1 cup sliced strawberries
- 1 cup sliced cucumber
- 1 cup spinach
- 1 cup mixed field greens
- 1/2 ½ cup shredded Gouda cheese (optional)
- 2 hard boiled eggs, sliced
- 2 T. raspberry vinaigrette (made with fresh strained raspberry puree. olive oil, vinegar)
- Juice and zest of lemon
- Salt and pepper
Italian Spinach and Tomatoes

In a medium skillet, heat olive oil over medium heat
- 1 T. olive oil
- 1 clove garlic, minced
- 1 cup bella or cherry tomatoes
- 2 cups fresh spinach
- salt and pepper
- 1/2 t. dried oregano
- 1/2 t. dried basil
Lemon Cheesecake with Blueberry Sauce

Health Tip: use low or non-fat milk and cream cheese to save calories and fat
- Cheesecake
- 0.9 oz pkg White Chocolate Instant Sugar-free Pudding mix
- 2 cups fat free milk
- 8 oz fat free cream cheese
- 2.9 oz pkg Lemon flavored cook & serve pudding mix
- 2 cups powdered sugar
- 2 eggs
- 1 T. vanilla
- 5 lemon creme cookies crushed
- Blueberry Sauce
- 1 cup blueberries (some for sauce and some to leave whole)
- 2 T. agave nectar (or honey)
- Juice and zest of one lemon
Feta & Green Onion Buffalo Burgers

Mix all ingredients except avocado together
- 1 lb ground buffalo
- 2 cloves of garlic, minced
- 2 green onions, diced
- 1/4 cup feta cheese crumbles
- 3 T. worcestershire sauce (low sodium)
- pinch of salt and pepper
Almond Joy Protein Shake

Blend all ingredients and enjoy!
- 1 cup almond milk
- 1 scoop chocolate whey or other protein powder
- 2 T. pure coconut butter
- 1/2 cup Greek yogurt
- 7-10 ice cubes
Chicken and Panchetta

Saute all ingredients in a pan with olive oil until chicken is cooked through and browned
- 2 boneless, skinless chicken breasts, cubed
- 3 oz pancetta
- 1 T. olive oil
- 3 – 4 cloves of garlic, minced
- 1 large leak (bulb only), diced
- 1 T. fresh oregano
- 1 t. fresh thyme
- Salt and pepper to taste
Chocolate Peanut Butter Bars

Place parchment or wax paper in the bottom of an 8x8 pan and grease with butter
- 1 cup butter
- 1 cup peanut butter
- 2 cups powdered sugar
- 1 t. vanilla
- 1 cup dark chocolate chips, melted
Alexis' Peanut Butter Oreo Cake

Preheat oven to 350 F. Prepare two 9 inch round pans with butter and flour
- 1 cup cake flour
- 1 1/2 t. baking soda
- 1 t. baking powder
- 1/4 t. salt
- 1/2 c. butter, at room temperature
- 6 oz bittersweet chocolate
- 1 cup sour cream
- 3/4 cup sugar
- 3 eggs
- 1/4 cup chocolate syrup
- 1 t. vanilla
- Double recipe of Peanut Butter Frosting (see my Cream Cheese Peanut Butter Frosting recipe)
- 10-12 peanut butter filled Oreos, crumbled
Chicken and Tomato Salad

Toss arugula with olive oil, lemon, sea salt and pepper
- 1 chicken breast, grilled and sliced
- 2 cups arugula
- 1 T. olive oil
- Juice of half of a lemon
- Sea salt and pepper
- 6-8 cherub or cherry tomatoes, sliced in half
- 1/8 cup macadamia nuts
- 2 T. soft goat cheese, crumbled (optional)
Tuna Wraps

- 1 avocado, mashed
- Juice of a lime
- 1 roasted red chili, chopped
- 1 green on onion, chopped
- sea salt and pepper to taste
- fresh cilantro leaves, chopped (optional)
