Unsweetened Almond Paste

Place almonds in a single layer on cookie sheet
- 1 c. whole blanched almonds or 1 1/3 c. slivered almonds
- 2 tbsp. water
- 2 tsp. butter
- 1/2 tsp. almond extract (optional)
Salsa

Pulse all ingredients food processor or blender until well blended
- 5 diced roma tomatoes
- 1 - 1 lb 12 oz can diced tomatoes + 14.5 oz can diced tomatoes
- 6 green onions chopped
- 4-6 jalapenos chopped (depending on how hot you like it)
- 3 cloves garlic (diced and sauted in a dash of olive oil until just browned)
- 1 T. garlic powder
- 1 T. cumin
- 1 T. green chili powder
- 5-6 roasted, peeled, and chopped anaheim (green) chilis (or an 8 oz can)
- 1/8 cup chopped fresh cilantro (or 2 T. dried cilantro)
- Juice and zest of 2 limes
- Salt and pepper to taste
- Pulse all ingredients food processor or blender until well blended. Enjoy with organic or low fat tortilla chips (white corn are my favorite), on eggs, potatoes, veggies, tacos, etc.
Berry Coconut Protein Smoothie

Blend all ingredients and enjoy!
- 1/2 banana
- 4 large strawberries
- 1/4 cup blueberries
- 1/2 coconut milk
- 1/2 cup almond milk
- 1 T. coconut butter
- 1 scoop egg white protein powder
- 6 or 8 ice cubes (skip if using frozen fruit)
Pumpkin Pie (almost Paleo)

Almost Paleo
- Crust
- 1 1/2 cups almond flour
- 1/4 cup butter
- 1 t. salt
- Pumpkin Pie
- 1 15 oz can pumpkin
- 1 13 oz can coconut milk
- 1/2 cup honey or agave nectar
- 3 eggs
- 1 T. pumpkin pie spice
- pinch of salt
- 1 T. arrow root starch (dissolved in a little cold water)
- 1 t. vanilla
Adobo Steak

Put all ingredients (except starch) in a crock pot and cook on low for 6-8 hours or on high for 3-4 hours
- 5-6 top sirloin or round steaks
- 1/2 yellow onion, sliced or rough chopped
- 6 green chilis, chopped (or one can)
- 3 T. Adobo seasoning (I use Safeway Organics brand)
- 1 T. ground cumin
- 3 T. Frank's Red Hot Original
- 28 oz can diced tomatoes (I like organic)
- 1/4 cup water
- 2 pinches sea salt
- 2 pinches pepper
- 1 T. kuzu root starch (or cornstarch)dissolved in 1/4 cup cold water
Orange Chicken Piccata

Leave out the pasta and make it Paleo
- 2 (4 oz ea) bonelss, skinless chicken breasts cut into cubes
- 3-4 small shallots, minced
- 3 cloves of garlic, minced
- 4 T. flour (use coconut flour to make it Paleo)
- 1 cup chicken broth
- 1/2 cup 100% orange juice
- 1/4 cup capers (drained)
- juice and zest of one large orange
- 4 servings of linguine (I used DeCio Pasta - Szechnan Orange Spice http://www.deciopasta.com/) - optional
Sauteed Greens

Heat olive oil on medium heat
- 2 T. olive oil
- 1/2 yellow onion, sliced
- 3 cloves garlic, minced
- 3 cups chopped Kale
- 2 cups fresh spinach
- 1 bunch asparagus spears, chopped
- salt and pepper
- 2 T. Veggie Bombay
Cream Cheese Peanut Butter Frosting

Mix all ingredients together until smooth
- 4 oz cream cheese
- 1/4 cup milk
- 1 cup natural peanut butter
- 1/4 cup powdered sugar
- 1 t. vanilla
Red Velvet Cheesecake Bars

Pre-heat oven to 325 F. Combine cake mix, 1 egg, and melted butter and form into a dough
- 1 red velvet cake mix
- 3 eggs
- 1/2 cup butter, melted
- 8 oz cream cheese
- 4 cups powdered sugar
Saucy Chops

Add all ingredients into crockpot and cook for 4-6 hours on low heat
- 4-6 boneless porkchops
- 2 shallots, sliced
- 14.5 oz can organic stewed tomoatoes
- 3 cloves garlic, minced
- 3 t. All Spice
- 3 t. ground ginger
- 3-4 T. Frank's Red Hot
- sea salt and pepper
