Needed to make a dish for us and the neighbors. This was easy, and went a long way. It was so good. I added some extras to make it special. Enjoy.

Ingredients

  • 2 lbs. ground beef (or chicken if you like)
  • Small bag of Fritos
  • 2 rolls of original crescent rolls (not butter)
  • 2 pkgs of taco seasoning
  • 1/2 cup water
  • 1/2 cup salsa
  • 1 can of refried beans
  • 1-1/2 cup sour cream (more if you like)
  • 1 cup guacamole
  • 18 ozs of shredded Mexician blend cheese

Step 1

Spray a 9 x 13 baking dish and arrange the crescent rolls so they cover both the bottom and sides. (I had about 4 extra crescent rolls I did not use)

In large skillet, cook meat till no longer pink; drain. Add water and seasoning packages. Add salsa to mixture.

Crush 1-1/2 cups Frito chips and place on bottom of prepared pan.
Spread refried beans over chips.
Add meat mixture.
Spread sour cream of meat.
Spread guacamole over sour cream (I blended the two to make it creamy)
Top with cheese.
Finish off with 1-1/2 cups of more crushed Fritos.

Bake at 375 for 30-45 minutes uncovered till bubbly and cheese is melted.

Remove from and let side for 5 minutes to settle. Cut into squares to serve.

If you wish to make a smaller version. Use half of recipe and put into a 10" deep dish pie plate.
