Bacon, Onion and Cheese Potatoes

Ingredients

  • 8 slices cooked bacon, drained and coarsely
  • chopped
  • 6 large russet potatoes, peeled and cut into
  • 1/2 inch pieces
  • 1 large onion, chopped
  • 1 cup packed grated hot pepper Monterey
  • Jack cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Step 1

Preheat oven to 350. Butter a 13 x 9 x 2 inch glass baking dish.

Combine bacon, potatoes and onion in the prepared baking dish. Season with salt and pepper and sprinkle with the Monterey Jack cheese. Dot with butter. Cover dish with aluminum foil and bake until potatoes and onions are very tender, about 1 hour.

Preheat boiler. Uncover baking dish and broil until the top of the potato mixture is brown and crisp, about 2 minutes.
