  • 3 kg Pork shoulder (or loin), cubed
  • 1 1/2 cup Flour
  • 2 tbsp Thyme
  • 3 tsp Allspice
  • 1 1/2 tsp Cayenne
  • 1 cup Oil
  • 18 Spring onions, chopped
  • 4 heads of garlic, chopped
  • 3-inch Ginger root, minced
  • 3/4 cup Soy sauce
  • 1/2 cup Brown sugar
  • 3 L Chicken stock

Step 1

-Mix together Flour,thyme,allspice and cayenne in a small bowl and coat pork.
-reserve seasoned flour mix for later.
-in a large saucepan brown pork in oil. Add onions,garlic and ginger to pork and cook for 2 minsadd reserved flour mix and mix well.
-mix together soy sauce, brown sugar and chicken stock, then add to pork and transfer all to slow cooker and cook on low for 6-8 hours.
