Zucchini, banana, flaxseed muffins

Ingredients
- nonstick spray
- 1.75 c flour
- 1/2 c ground flaxseed
- 1 c brown sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1.5 c grated zucchini
- 1/3 c mashed ripe banana
- 3/4 c milk
- 1 egg, beaten
- 1 tsp vanilla

Preparation
Step 1
Preheat oven to 350. Spray 12 muffin cups with cooking spray. In a large bowl, whisk together flaxseed, brown sugar, baking soda, baking powder, salt and cinnamon. Add zucchini and banana, stir to combine. In a small bowl, whisk together milk, egg and vanilla. Add milk mix to flour mix and stir until combined.
Scoop batter into muffin cups. Bake 20-25 minutes. Let cool completely.
