Ginger, Lime and Pineapple Punch

Ingredients
- 1 1/2 cups water
- 1 cup sugar
- 1 cup thinly sliced unpeeled fresh ginger
- 3 cups pineapple juice, chilled
- 1 1/2 cups lime vodka
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 liter bottle club soda, chilled
- ice cubes
- lime slices

Step 1
In a small saucepan, combine the water, sugar, and ginger. Bring to a boil, stir until sugar is dissolved; reduce heat. Simmer for 10 minutes. Cool ginger mixture to room temperature. Strain ginger mixture through a fine mesh sieve into a bowl. Cover with plastic wrap and chill for at least 2 hours.
In a large punch bowl or pitcher, combine the chilled ginger mixture, pineapple juice, vodka, lemon juice, and lime juice. Stir in club soda. Add ice cubes and lime slices.
