Pan Roasted Veal Chops with Chipotle Lime Butter

Ingredients

  • 4 thick veal chops
  • 1 tbsp plus 1 tsp olive oil
  • Salt and pepper
  • 1 stick butter, softened
  • 2-3 canned chipotle peppers in adobe sauce with 1 tbsp of the sauce
  • 2 tbsp fresh lime juice

Preparation

Step 1

1. In food processor, puree peppers with adobe sauce. Add butter, lime juice, salt and pepper. Chill until ready to use
2. Preheat oven to 425 degrees
3. Heat 1 tsp oil in oven proof skillet over medium high heat
4. Rub remaining oil on veal chops, season with salt and pepper. Sear 3 minutes on each side until nicely browned. Transfer pan to oven and roast 15-20 minutes
5. Remove pan from oven and put a scoop of cilantro butter under each chop. When melted, turn chops over to coat other side
