Corned Beef & Cabbage

Ingredients
- 1 lg. onion, cut into wedges
- 1 c. apple juice
- 1 bay leaf
- 1 corned beef brisket w/ spice packet (2 1/2-3 lbs), cut in half
- 1 sm. head of cabbage, cut into wedges

Preparation
Step 1
Place onion in 5 qt. slow cooker. Combine the apple juice, bay leaf and contents of spice packet; pour over onion. Top w/ brisket and cabbage. Cover and cook on low for 8-10 hours or till meat and veggies are tender. Discard bay leaf before serving.
