Ingredients

  • 6 oz uncooked soba (buckwheat noodles)
  • 2/3 cup fat-free, less sodium chicken broth
  • 2 tbs rice vinegar
  • 2 tbs low-sodium soy sauce
  • 1 tbs peanut butter
  • 2 tsp sugar
  • 1 tsp bottled minced fresh ginger
  • 1/2 tsp dark sesame oil
  • 1 tbs vegetable oil
  • 1 tsp bottled minced garlic
  • 2 cups (2 inch) diagonally cut asparagus
  • 1 pound peeled deveined large shrimp
  • 1/4 cup thinly sliced green onions

Preparation

Step 1

Cook noodles according to package directions, omitting salt and fat;
While noodles cook, combine chicken broth and next 6 ingredients (broth through sesame oil); stirring well;
Heat vegetable oil in large nonstick skillet over medium-high heat;
Add garlic, saute 45 seconds;
Add asparagus, saute 2 minutes;
Add shrimp, saute 2 minutes or until shrimp are done;
Add broth mixture and onions to pan and cook over medium heat until hot;
Add noodles and toss gently to coat
