Tex Mex Pasta Salad
Pasta combined with vegetables and tossed with an Italian dressing. Perfect for a hot summer's day!
- 12 ounces Rotoni Pasta, cooked & drained
- 1 small green pepper, diced
- 1 (15-ounce) can black beans
- 1 (10-ounce) can Rotel tomatoes, mild
- 1 (15.25-ounce) can corn
- 1/2 cup Italian dressing, creamy or regular
- 1 teaspoon chili powder
- 1 cup mayonnaise
- 1 teaspoon cumin
- 1 cup rotisserie chicken, cooked

Mix cooked pasta, green pepper, black beans, tomatoes and corn in a large bowl.
In a separate bowl combine Italian dressing, Chili powder, Mayonnaise and cumin. Mix well.
Pour sauce over pasta and mix well.
Add chicken, mix and serve immediately or refrigerate.
