Pan Seared Shrimp with Chipotle-Lime Glaze

Ingredients

  • 1.25 - 2 lbs extra large shrimp
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/8 tsp sugar
  • 2 scallions
  • 1 or 2 limes
  • leaves from 4-6 cilantro stems
  • 1 chipotle pepper en adobo plus 2 tsp of adobo
  • 4 tsp light brown sugar
  • 2 t olive oil

Step 1

Peal and devein shrimp

place in bowl and toss with salt pepper and sugar

trim off scallion roots, then cut the white and light green parts crosswise in very thin slices to yield 3 or 4 TBS. Place in medium bowl. Cut the limes in half and squeeze into bowl to yield 2 TBS. Chop cillantro to yield 3 TBS and add to bowl. Mince chipotle and add to bowl along with 2 tsp of the adobo and brown sugar. MIX WELL.

HEAT 1 TBS OF OLIVE OIL IN LARGE SKILLET OVER HIGH HEAT UNTIL JUST BEGINS TO SMOKE. A
add half the shrimp. Cook for about 2 min. Remove skillet from heat. Use tongs to flip shrimp Let statnd for about 30 seconds so that all but very center of shrimp has become opaque. Transfer shrimp to large plate.

Add remaining oil to skillet.When hot, add remaining shrimp and repeat process.. After second batch has stood off the heat, return first batch combining all the shrimp.. Add the chipotle mixture. Toss to incorporate. Cover and let stand for about 2 min. The shrimp will be cooked through.
