Ingredients
- 8 c Chicken stock
- 6 c Water
- 4 c Red or Sweet potatoes, cut into chunks
- 1 large yellow onion, diced
- 3 cloves garlic, diced
- 7 Italian sausage links (I used 4 mild and 3 hot)
- 1 Large bunch of Kale
- olive oil
- salt & pepper
- red pepper flakes, to taste

Step 1
1. Put chicken stock, water and potatoes into a large pot and bring to a boil.
2. Saute garlic and onion in olive oil and add that to the boiling potato mixture.
3. Brown Italian sausage. Remove casings and break up / crumble as you brown. Add to potato and onion mixture. Lower heat anytime during the cooking process when the potatoes are starting to get soft.
4. Add salt, black pepper and red pepper flakes to taste.
5. At the end, bring soup to a brief boil and add one large bunch of kale leaves to the soup. Lower to a simmer for a few more minutes. Cook time is up to how soft you want your potatoes.
