cups cucumber, finely chopped seeded peeled
cup tomato, finely chopped seeded
cup red onion, chopped
tablespoons fresh parsley, minced
jalepeno pepper, seeded and chopped
teaspoons fresh cilantro, minced
garlic clove, minced or pressed
cup reduced fat sour cream
teaspoon lemon juice
teaspoon lime juice
tsp ground cumin
tsp seasoned salt
In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with tortilla chips. NOTE: 1/4 cup is only 16 calories! You may substitute the sour cream with 0% fat free Greek Yogurt.
