Ingredients

  • 6

    slices bacon

  • 3

    tblsp olive oil

  • 2

    tlbsp cider vinegar

  • 2

    tsp Dijon mustard

  • 1/4

    tsp salt

  • 1/4

    freshly ground pepper

  • 6 oz bag fresh baby spinach leaves

  • 1

    Fuji apple, thinly sliced

  • 1/2

    cup sliced red onion

  • 1/4

    cup chopped praline pecans

  • 2

    ox blue cheese, crumbled

Directions

In 12 inch skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 3 tablespoons of the drippings. In large bowl, mix oil, vinegar, mustard, salt, pepper and reserved bacon drippings with whisk. Add spinach, apple, onion, pecans and reserved crumbled bacon; toss to coat with vinaigrette. Sprinkle with cheese. Serve immediately.
